White Sauce


From The New McCall's Cook Book (1973)

Prep time 15 minutes

Things You Need

  • Saucepan
  • Suitable stiring tool
White Sauce

Ingredients

  • 1/4 cup butter or margarine
  • 2 cups milk
  • 1/4 cup flour
  • 1/2 t salt
  • 1/8 t pepper

Directions

  1. In medium saucepan, slowly heat butter just until melted and golden, not brown
  2. Remove from heat
  3. Add flour, salt, and pepper
  4. Stir until smooth
  5. Add milk a small amount at a time, stirring after each addition
  6. Return to heat
  7. Over medium heat, bring to boiling stirring constantly
  8. Reduce heat and simmer 3 minutes

Optional

Adjust amount of milk for thinner or thicker sauce.


Cheese Sauce

Great over cooked vegetables

A variation of the White Sauce above.

Things You Need

  • Saucepan
  • Suitable stiring tool
  • Grater if cheese is not yet grated
Cheese Sauce

Ingredients

  • White Sauce
  • 1/2 t dry mustard
  • 2 cups grated sharp cheddar cheese (or whatever flavor of cheese you prefer)

Directions

  1. While preparing the above White Sauce, add the dry mustard (I add it with the flour)
  2. After the White Sauce is removed from heat, stir in the cheese

Optional

Add a little more milk (like 1 oz) for a thinner cheese sauce.
