Things You Need

  • Mixing bowl
  • 8x8 Baking dish
Cornbread

Ingredients

  • 1 cup yellow or white cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 T baking powder
  • 1 t table salt
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg, lightly beaten

Directions

  1. Preheat oven to 400° and grease 8-inch square baking pan
  2. Combine the dry ingredients in a bowl, mixing well
  3. Combine the liquid ingredients in a separate bowl, mixing well
  4. Add milk mixture to flour mixture, stir just until blended
  5. Pour batter into prepared pan
  6. Bake for 20 to 25 minutes or until wooden pick inserted in center comes out clean

Optional

Muffins: Spoon batter into greased or paper lined muffin cups filling 2/3 full and bake for 15 minutes.


From Weight Watchers® (Core)

Prep time 5 minutes, baking 28-35 minutes

Things You Need

  • Mixing bowl
  • Baking dish (8x8 for thicker cornbread or 9x13 for flatter cornbread)
Core Cornbread

Ingredients

  • 1 cup uncooked cornmeal
  • 1/2 cup uncooked whole wheat hot natural cereal (like Cream of Wheat® which is Enriched Farina)
  • 1 cup fat-free sour cream
  • 1/2 cup unsweetened applesauce
  • 1 t baking powder
  • 1/2 t table salt
  • 1/3 cup Sucralose
  • 2 t olive oil
  • 2 large eggs
  • 1/2 cup fat-free skim milk

Directions

  1. Preheat oven to 400°
  2. Combine all ingredients
  3. Coat baking dish with cooking spray
  4. Pour batter into baking dish and bake
    • 8x8 pan, bake for 35 minutes
    • 9x13 pan, bake for 28 minutes

Optional

Goes well with core chili.
