Pancakes


Should serve two

A regular around our house.

Prep and Cooks in 15-30 minutes

Things You Need

  • Mixing bowl
  • Frying pan or skittle
  • Something to flip the pancakes with
  • Range, hot plate, or some other heat source
Pancakes

Ingredients

  • 2 T oil
  • 1 egg
  • 3/4 cup milk
  • 1 cup flour
  • 3 t (or 1 T) baking powder
  • 3 t (or 1 T) granulated sugar
  • 1/2 t salt

Directions

  1. Mix the first three ingredients (wet ones) then stir in mixed dry ingredients
  2. Mixture should have some lumps, do not overmix
  3. Pour about 1/2 c batter onto hot pan or griddle
  4. Turn according to the bubbles on the pancake (good luck on this as it take practice to judge proper doneness)
  5. Serve when second side is cooked

Optional

So many options, you are only limited by your imagination, your ability to stomach odd foods, and your willingness to clean up any mess.

Some additions (such as strawberries or chocolate chips) can make a mess of the pan. Other options can make a mess of the kitchen.

We often add cornmeal, wheat flour, or applesauce with cinnamon. When adding cornmeal or wheat flour, reduce the white flour to compensate. When adding applesauce you may reduce the oil by up to half.

When adding nuts or candy pieces, drop them into the pancake right after it is poured onto the pan.


When doing half batches (1/2, 1 1/2, 2 1/2, etc.) round the egg count up and reduce the milk slightly.


Orange Pancakes


A Delightful Treat

We often have these on Christmas Morning

Things You Need

  • Blender
  • Frying pan or skittle
  • Something to flip the pancakes with
  • Range, hot plate, or some other heat source

Ingredients

  • 2 T oil
  • 1 egg, separated
  • 3/4 cup milk
  • 1 orange, pealed with no seeds
  • 1 cup flour
  • 3 t (or 1 T) baking powder
  • 3 t (or 1 T) granulated sugar
  • 1/2 t salt

Directions

  1. Mix the dry ingredients
  2. Put the milk, orange, and egg whites into a blender and mix well
  3. Pour the blended orange mix into a mixing bowl and fold in the oil and egg yolks
  4. Stir in the mixed dry ingredients
  5. Mixture will have lumps, do not mix well
  6. Pour about 1/2 c batter onto hot pan or griddle
  7. Turn according to the bubbles on the pancake (good luck on this as it take practice to judge proper doneness)
  8. When second side is cooked, serve with homemade vanilla syrup

Optional

Doubles well but do not triple as batter will flatten before the entire batch is cooked. It would be better to make separate batches to get more Orange Pancakes that are still light and fluffy.
