Waffles


Should serve four

Things You Need

  • Mixing bowl
  • Waffle iron
  • Possibly something to spray on the iron
Waffles

Ingredients

  • 1/3 cup oil
  • 2 eggs
  • 1 cup milk
  • 1 1/4 cup flour
  • 3 t (or 1 T) baking powder
  • 3 t (or 1 T) granulated sugar
  • 1/2 t salt

Directions

  1. Preheat the waffle iron
  2. Mix the first three ingredients (wet ones) then stir in mixed dry ingredients
  3. Mixture should have some lumps, do not overmix
  4. Pour about 3/4 cup batter onto hot waffle iron and close it
  5. Watch your iron's indicator for when the waffles are done, then remove and refil
  6. Serve while hot

Optional

Waffles cannot take as many add-ins as pancakes since many things can stick to the iron. Do not add fruit or sweets to the batter or you may never get the waffle out of the iron.

We often add cornmeal, wheat flour, or applesauce with cinnamon. When adding cornmeal or wheat flour, reduce the white flour to compensate. When adding applesauce you may reduce the oil by up to half.

When adding nuts or candy pieces, drop them into the pancake right after it is poured onto the pan.


When doing half batches (1/2, 1 1/2, 2 1/2, etc.) round the egg count up and reduce the milk slightly.


Orange Waffles


A Delightful Treat

Things You Need

  • Blender
  • Waffle iron
  • Possibly something to spray on the iron
Orange Waffles

Ingredients

  • 1/3 cup oil
  • 2 eggs, separated
  • 1 cup milk
  • 1 orange, pealed with no seeds
  • 1 1/4 cup flour
  • 3 t (or 1 T) baking powder
  • 3 t (or 1 T) granulated sugar
  • 1/2 t salt

Directions

  1. Mix the dry ingredients
  2. Mix the oil and egg yolks in a mixing bowl
  3. Put the milk, orange, and egg whites into a blender and mix well (whip)
  4. Pour the blended orange mix in with the oil mix and fold
  5. Stir in the mixed dry ingredients
  6. Mixture will have lumps, do not mix well
  7. Pour about 3/4 cup batter onto hot waffle iron and close it
  8. Watch your iron's indicator for when the waffles are done, then remove and refil
  9. Serve while hot

Optional

Doubles well but do not triple as batter will flatten before the entire batch is cooked. It would be better to make separate batches to get more Orange Waffles that are still light and fluffy.
