Oatmeal Chocolate Chip Cookies

Original Recipe

This was from a very old cookbook my mother had (I believe Charlotte has this cookbook)

Prep time 20 minutes, baking 8-12 minutes

Things You Need

  • Mixing bowl
  • Cookie sheets
  • Oven to bake in
Oatmeal Chocolate Chip Cookies

Ingredients (dry, to be sifted together)

  • 1 t baking soda
  • 1 t baking powder
  • 1 t salt
  • 3 cups flour
  • 2 t cinnamon
  • 1/4 t nutmeg

Ingredients (to be blended together)

  • 1 cup butter (or margarine)
  • 1 1/2 cup sugar
  • 3 eggs
  • 1 cup sour milk (stir in almost a t of vinegar to good milk, or use Buttermilk)
  • 1 t vanilla

Ingredients (final, to be added last)

  • 3 cups oatmeal (use quick, old fashioned, or a blend of both)
  • Optional: 2+ cups chocolate chips (or other add-in)

Directions

  1. Soften butter (or margarine) and preheat oven at 375°
  2. Sift dry ingredients and set aside
  3. Put softened butter into stand mixer and mix (almost whipping)
  4. When you feel the butter is blended and soft enough, add sugar and continue to mix
  5. Add eggs, then mix in the milk, then vanilla
  6. Slowly add the sifted dry ingredients and mix well
  7. Finally, add the oatmeal
  8. Add chocolate chips (or other add-in): If your mixer is not strong or sturdy enough, mix by hand
  9. Drop by spoonful onto baking pan (cookie sheet)
  10. Bake at 375° for 8-10 minutes
  11. Remove from the oven just before they look done (they darken a little after removed from the oven)
  12. Cool slightly and remove from baking pan

Optional

Include no add-ins and have Old Fashioned Oatmeal Cookies.

Substitue raisins for the chips and have a more healthy treat (but don't serve them to me).

Other add-ins include: peanut butter chips, walnuts, M&M's®, white chocolate chips, etc. Feel free to use a combination of add-ins too. You are only limited by your budget, your taste, and the availability of the add-ins you desire.


Vanishing Oatmeal Raisin Cookies

From the Quaker™ Oats container

Prep time 20 minutes, baking 8-10 minutes

Makes about four dozen cookies

Vanishing Oatmeal Raisin Cookies

Ingredients

  • 14 T butter (almost 2 sticks)
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 t vanilla
  • 1 1/2 cups all-purpose flour
  • 1 t baking soda
  • 1 t cinnamon
  • 1/2 t salt
  • 1 cup raisins
  • 3 cups Quaker™ Oats (quick or old fashioned, uncooked)

Directions

  1. Soften butter (or margarine) and preheat oven at 350°
  2. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy
  3. Add eggs and vanilla
  4. Beat well
  5. Sift together flour, baking soda, cinnamin, and salt
  6. Slowly add the sifted dry ingredients into the creamy blend and mix well
  7. Add the oats then the raisins and mix well
  8. Drop by spoonful onto ungreased cookie sheet
  9. Bake at 350° for 8-10 minutes or until light golden brown.
  10. Cool 1 minute on cookie sheet
  11. Remove cookies to wire rack and cool completely

Optional

Best when served warm.


Vanishing Oatmeal Raisin Cookie Variations

For High Altitude: Increase flour to 1 3/4 cups.

Bar Cookies: Bake 30 to 35 minutes in ungreased 13 x 9-in metal baking pan.


Oatmeal Scotchies

Another delicious cookie

This was from the back of the Nestlé® Toll House® Butterscotch Flavored Morsels package

Prep time 15 minutes, baking 7-10 minutes. Makes about 4 dozen cookies

Things You Need

  • Cookie sheets
  • Oven to bake in
Oatmeal Scotchies

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 t baking soda
  • 1/2 t salt
  • 1/2 t ground cinnamon
  • 1 cup (2 sticks) butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 t vanilla extract or grated peel of 1 orange
  • 3 cups quick or old-fashioned oats
  • 1 2/3 cups (11 oz package) Nestlé® Toll House® Butterscotch Flavored Morsels

Directions

  1. Preheat oven to 375°
  2. Combine flour, baking soda, salt and cinnamon in a small bowl
  3. Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in large mixer bowl until creamy
  4. Gradually beat in flour mixture
  5. Stir in oats and morsels
  6. Drop by rounded tablespoon onto ungreased baking sheets
  7. Bake at 375° for 7-8 minutes for chewy cookies or 9-10 minutes for crisp cookies
  8. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely

Optional

Other versions include: use half and half Butterscotch and Semi-sweet Chocolate Morsels.


Oatmeal Scotchies Variations

Pan Cookies: Grease 15 x 10-inch jelly-roll pan. Prepare dough as above. Spread into prepared pan. Bake for 18 to 22 minutes or until golden brown. Cool completely in pan on wire rack. Makes 4 dozen bars.
