Jello®Poke Cake

Serving for twelve

Prep 10 minutes, baking 25 minutes, plus some cooling time

Things You Need

  • 2 Mixing bowls
  • 13" x 9" Pan or other baking dish
  • Oven to bake in
  • Refrigerator for chilling
Poke Cake


  • 1 pkg white cake mix
  • 1-4 oz pkg instant vanilla pudding
  • 4 eggs
  • 1/4 cup oil
  • 1 cup water for cake
  • 1-3 oz package Raspberry Jello®
  • 1 cup boiling water
  • 1/2 cup cold water
  • Cool Whip® or other whipped topping


  1. Preheat oven to 350°
  2. Grease and flour baking pan
  3. Blend first five ingredients and beat for 2 minutes
  4. Pour cake mixture into prepared baking pan
  5. Bake 40-45 minutes
  6. When cake is done, remove from oven and let it slightly cool
  7. Dissolve Jello® in the boiling water, then add the cold water
  8. Poke cake every 1/2" with a fork or the end of wooden spoon
  9. Pour Jello® over warm cake
  10. Chill for 4 hours
  11. Spead whipped topping over chilled cake
  12. Slice and serve


Use different flavors of Jello.

Top with fruit, such as sliced strawberries. Adjust additional topping according to the flavor of Jello® used. For example, serve with peaches if peach Jello® was used.
