Gallacher Meat Rolls

Also known as Flautas

Serving for four

Prep and Cooks in 30 minutes

Things You Need

  • Mixing bowl
  • Strong fork or other mashing tool
  • Pan to fry these in
  • Tongs to reach into the hot oil
  • 1 pint or more of oil
  • Plenty of paper towels
  • Toothpicks
Gallacher Meat Rolls


  • 1 dozen flour tortillas (8" to 10")
  • 1 can of roast beef (12 oz)
  • 1 to 2 T corn starch


  1. Pour about 1/2" of oil into the pan and heat
  2. Empty the meat can into a mixing bowl and mash
  3. Stir in some corn starch to thicken any juices
  4. Spread about 1/2" line of the meat just off center across a tortilla
  5. Tightly roll the tortilla around the line of meat and insert toothpick
  6. Continue rolling the tortillas and arranging them near the pan
  7. When the oil is hot enough, set in some meat rolls
  8. Let cook a minute or so, then turn them over
  9. Remove when they are light tan
  10. Slide the other meat rolls over and put in a fresh one
  11. Continue cooking until all meat rolls are done
  12. Best when served very warm


Garnish with shreaded lettuce. You could serve with salsa, guacamole, and/or sour cream.

May add cheese or spices before cooking.
