Prep in 15 minutes, bakes in 45 minutes

Things You Need

  • 10 qt or larger pot
  • Two 13" x 9" or similar baking dishes
  • Oven to bake this in
Dressing

Ingredients

  • 2 12 oz boxes of stuffing (I use Mrs. Cubbison's corn bread)
  • 2 cups (4 sticks) butter or margarine
  • 2 cups onion diced (or just 1 full onion diced)
  • 2 cups celery diced (or just 1 full celery bunch diced)
  • 1 apple diced (I use Granny Smith)
  • 3/4 cup raisins
  • 1 can (6 oz) small black pitted olives
  • 1 can (3 oz) sliced black olives
  • 3 1/2 cup chicken broth or water

Directions

  1. Spray baking dishes with cooking spray or rub with butter
  2. Preheat oven to 350°
  3. Melt butter in a large pot
  4. Add diced onion and celery to melted butter and sauté until translucent, then remove from heat
  5. Add stuffing mix and stir
  6. Add the diced apple, raisins, and olives, stirring after each addition
  7. Gradually stir in broth
  8. Pour mixture into the two baking dishes
  9. Cover with foil and bake for 30 minutes
  10. Remove foil and bake 15 minutes more

Optional

Of course the apple, raisins, and olives are added options. Also this can be halved pretty easily.

If you have cooked turkey, add 1 cup cubed turkey for each 6 oz's of stuffing mix and make this a complete meal casserole.
