Funeral Potatoes (aka Cheesy Potatoes)

Funeral (or Cheesy) Potatoes


Serving for sixteen

Prep in 15 minutes, bakes in 45 minutes

Things You Need

  • Various pans depending on the potatoes you select
  • Large mixing bowl
  • 13" x 9" or similar baking dish
  • Oven to bake this in
Funeral Potatoes

Ingredients

  • 2 lbs potatoes (either 32 oz of frozen hash browns or 2 lbs of potatoes diced and parboiled)
  • 13 T butter (1T for onion, ½ cup for potato mix, and ¼ cup for topping)
  • 1 cup onion diced (or just 1 medium onion diced)
  • 2 (10-11 oz) cans condensed cream of chicken soup (can use other cream soups)
  • 1 pint sour cream
  • 2 cups grated cheese (sharp is good)
  • 2 to 3 cups corn flakes, slightly crushed
  • Salt and pepper to taste

Directions

  1. If using fresh potatoes, clean (or peal), dice, and parboil potatoes first
  2. Spray baking dish with cooking spray or rub with butter
  3. Preheat oven to 350°
  4. Melt ½ cup (1 stick) butter in a small sauce pan for the potato mixture
  5. Melt 1T butter in a medium skillet or sauce pan for the onions
  6. Add diced onion to melted 1 T butter and sauté until translucent
  7. While the butter is melting and the onion is cooking, combine the following in a large mixing bowl: Potatoes, cream soups, sour cream, grated cheese, and salt and pepper
  8. Stir in all of the melted butter and the onions
  9. Melt the last ¼ cup (4 T) butter
  10. Pour potato mixture into baking dish
  11. Mix crushed corn flakes into melted butter and cook a minute to make topping
  12. Sprinkle or spread topping over potato mixture
  13. Bake for 45 minutes or until hot and bubbly
  14. Serve hot

Optional

When using frozen potatoes, use cubed or try shredded.

Use cream of mushroom or cream of celery for a new taste.

Add cubed ham or crumbled bacon to make this a complete meal casserole.

Topping can be made with potato chips, crackers, or most anything crunchy.

Green onions may be used.

Add seasoning salt or other spices to change up the flavor.
